The main component of the cauliflower is the water, which, accompanied by the low content that contains both carbohydrate and protein as fat, turns it into a food of low caloric intake. It is considered a good source of fiber, as well as vitamins and minerals.

Cauliflower is rich in vitamin C, folate, and vitamin B6. It also contains other B group vitamins, such as B1, B2 and B3, but in lesser amounts. Vitamin C has antioxidant, involved in the formation of collagen, bones, teeth and red blood cells, and promote the absorption of iron from food and improve defenses against infections. Folates are involved in the production of red and white blood cells, in the synthesis of genetic material and in the formation of immune system antibodies. Vitamin B1 acts on the metabolism of carbohydrates. Therefore, the requirements of this vitamin depend, in part, the carbohydrate content of the daily diet. Its deficiency may be associated with neurological disorders or mental (fatigue, loss of concentration, irritability, or depression). Magnesium plays an important role in the formation of bones and teeth, is related to the functioning of intestine, nerves and muscles. In addition, it improves the immunity and has a mild laxative effect. Like other vegetables of the same genus Brassica, the consumption of cauliflower is advised by its high content of elements, phytochemicals (glucosinolates, isothiocyanates and indoles). These contribute to the prevention of some degenerative diseases and stimulate the immune system by its nature as an antioxidant. Many of these sulfur compounds (dimetilsulfuro, trimetilsulfuro ) are responsible for the strong aroma given off by this vegetable during cooking.. Source: Murcia/ Andalucía
